Pasta with Peach and Chipotle Sauce

  • 1 can canned peaches
  • 1 dried árbol chile, seedless and soaked in hot water
  • 1 package fusilli pasta, cooked and drained
  • 1/4 cups toasted sesame seeds
  • 1/2 cups sour cream, to taste
  • salt, and pepper to taste

  • For the sauce, blend half of the peaches with the chili, cream, and sesame seeds. Add water and oil to make the mixture more liquid.
  • Heat the sauce over low heat for 5 minutes or until it thickens slightly, stirring constantly to prevent sticking.
  • Coat the pasta with the sauce and add the sesame seeds and the rest of the canned peaches.
