Pasta with Creamy Bell Pepper Sauce

  • 1 package Rigatoni D'Luigi®, 500 g
  • 1/2 cups evaporated milk, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 4 yellow bell peppers, roasted and seedless cut into medium pieces, for the sauce
  • 1 cup cream cheese, in cubes, for the sauce
  • 1/4 cups table cream, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 2 tablespoons butter, for the sauce
  • Parmesan cheese, for garnish
  • parsley, only the leaves, for garnish

  • Heat water in a pot over medium-high heat. When it comes to a boil, season with salt and add the Rigatoni D'Luigi® and cook according to package instructions.
  • Drain the pasta and set aside.
  • For the sauce: Blend evaporated milk, onion, garlic, bell peppers, cream cheese, half and half, salt, and pepper for 3 minutes.
  • Melt butter in a saucepan over medium heat and pour in the bell pepper sauce. Cook for 5 minutes and add the pasta. Mix well and remove from heat.
  • Serve the pasta with creamy bell pepper sauce in a deep plate, sprinkle with Parmesan cheese and garnish with parsley.
