Pasta with Salmon, Capers, and Cream

  • 500 grams penne pasta
  • 1/4 cups olive oil  1/4 cups olive oil

  • 250 grams salmon, chopped

  • Heat 10 cups of water in a large pot. When it starts to boil, add the penne and cook for about 5-7 minutes or until the pasta is al dente. To ensure it's al dente, taste the pasta and remove it from the water while it's still slightly firm.
  • Remove the pasta from the water and cool slightly with cold water to stop the cooking.
  • In a large skillet, heat the oil and cook the chopped onion until it's translucent (not browned). Add the salmon and continue cooking for 2 minutes.
  • Add the cream and capers and season with salt and pepper.
  • Add the pasta to the sauce and serve immediately.
  • Serve with grated Parmesan cheese.
