Heat 10 cups of water in a large pot. When it starts to boil, add the penne and cook for about 5-7 minutes or until the pasta is al dente. To ensure it's al dente, taste the pasta and remove it from the water while it's still slightly firm.
Remove the pasta from the water and cool slightly with cold water to stop the cooking.
In a large skillet, heat the oil and cook the chopped onion until it's translucent (not browned). Add the salmon and continue cooking for 2 minutes.
Add the cream and capers and season with salt and pepper.
Add the pasta to the sauce and serve immediately.
Serve with grated Parmesan cheese.
