Penne with Wild Mushrooms FAGE Total

  • 2 tablespoons olive oil
  • 3 shallots, peeled and finely chopped
  • 2 cloves garlic, peeled and crushed
  • 2.3 pounds oyster mushrooms, fresh, clean, and sliced
  • 1 tablespoon balsamic vinegar
  • 1.1 pounds penne rigate pasta
  • 1/4 teaspoons nutmeg powder
  • salt, and pepper
  • 12 ounces FAGE® Total 0% greek style yogurt
  • 2 tablespoons basil, fresh and chopped parsley

  • Heat the oil in a large skillet and sauté the chopped shallots and crushed garlic for 2-3 minutes without browning. Add the mushrooms and vinegar and cook for another 3-4 minutes.
  • Meanwhile, cook the penne rigate according to the package instructions and drain well. Toss the pasta with the mushrooms and heat again.
  • Season to taste. Add the FAGE® Total 0% Greek Yogurt and stir well. You can sprinkle some parmesan cheese before serving.
  • Serve hot and garnish with fresh herbs to taste.
