Preparation
Heat the oil in a large skillet and sauté the chopped echallots and crushed garlic for 2-3 minutes without browning. Add the mushrooms and vinegar and cook for another 3-4 minutes.
Meanwhile, cook the penne rigate as indicated in the package instructions and drain well. Empty and stir the pasta with the mushrooms and heat again.
Season to taste. Add the Greek Style Yoghurt FAGE® Total 0% and stir well. You can sprinkle some Parmesan cheese before serving.
Serve hot and decorate with fresh herbs to taste.
