Poblano Spaghetti

  • water, to boil the pasta
  • 1 tablespoon salt
  • 500 grams spaghetti
  • 1/4 onions
  • 1 clove garlic
  • 4 Poblano chiles
  • 1/3 cups yellow corn
  • 1 cup cream cheese
  • 1 cup evaporated milk
  • 1/2 cups chicken broth
  • salt
  • pepper
  • 2 tablespoons butter
  • Poblano chile, in thin strips, for decoration
  • yellow corn kernels, for decoration
  • panela cheese, in cubes, for decoration
  • Parmesan cheese, to accompany
  • bread, to accompany

  • In a pot, bring the water to a boil and when it reaches a boil, add the salt, wait for it to return to temperature, then add the pasta and cook for 12 minutes. Drain, cool, and set aside.
  • In a skillet over medium heat, roast the poblano peppers for 15 minutes until charred; remove from the skillet and place them in a plastic bag, set aside for 10 minutes until they sweat, then peel and clean the peppers with the help of a knife.
  • Blend the roasted poblano peppers, corn, cream cheese, garlic, onion, evaporated milk, chicken broth, salt, and pepper. Add to a pot with butter and cook for 10 minutes, pour in the pasta and mix with the sauce.
  • Serve and decorate with the poblano pepper, corn, and panela cheese, accompany with Parmesan cheese and bread.
