  • 200 grams rice noodle, vermicelli
  • 1 tablespoon sunflower oil
  • 1 teaspoon ginger, chopped
  • 1 tablespoon spicy curry, powder
  • 1 cabbage, bok choy, cut into 1 cm strips
  • 1 carrot, large carrot, julienned
  • 150 milliliters chicken broth, hot
  • 1 teaspoon white tea, brown sugar
  • 2 teaspoons white wine vinegar
  • 400 grams shrimp, small cooked peeled shrimp
  • 140 grams soybean sprouts
  • chives, chopped
  • vegetable oil, oriental spicy oil, for serving
  • soy sauce, for serving

  • Place the pasta in a bowl, cover with boiling water and soak for 5 minutes. Drain well.
  • Meanwhile, heat the oil in a wok and fry the ginger for 1 minute. Add the curry and cook for 1 minute.
  • Add the bok choy and carrot, stir-fry for 2 minutes.
  • Add the chicken broth, sugar, and vinegar, then add the shrimp, bean sprouts, and noodles.
  • Cook for a few minutes, then add the scallions and serve accompanied with some oriental spicy oil and soy sauce.
