200 grams rice noodle, vermicelli
1 tablespoon sunflower oil
1 teaspoon ginger, chopped
1 tablespoon spicy curry, powder
1 cabbage, bok choy, cut into 1 cm strips
1 carrot, large carrot, julienned
150 milliliters chicken broth, hot
1 teaspoon white tea, brown sugar
2 teaspoons white wine vinegar
400 grams shrimp, small cooked peeled shrimp
140 grams soybean sprouts
chives, chopped
vegetable oil, oriental spicy oil, for serving
soy sauce, for serving

Place the pasta in a bowl, cover with boiling water and soak for 5 minutes. Drain well.
Meanwhile, heat the oil in a wok and fry the ginger for 1 minute. Add the curry and cook for 1 minute.
Add the bok choy and carrot, stir-fry for 2 minutes.
Add the chicken broth, sugar, and vinegar, then add the shrimp, bean sprouts, and noodles.
Cook for a few minutes, then add the scallions and serve accompanied with some oriental spicy oil and soy sauce.
