Spaghetti Aglio e Olio

Simple and quick traditional Italian recipe, consisting of spaghetti with olive oil and chopped garlic. It is a dish full of flavor and its preparation will not take much time. It is excellent to accompany with white wine.

  • 4 cloves garlic
  • 6 tablespoons olive oil
  • 1 lemon
  • 2 sprigs parsley
  • 1 teaspoon cayenne pepper
  • 200 grams spaghetti
  • 10 grams Parmesan cheese
  • salt and pepper

  • Peel and slice the garlic into thin flakes, remove the leaves from the parsley stems and chop finely. Crush the red pepper.
  • Cook the pasta in 2 liters of water with 2 tablespoons of salt for 8 minutes over high heat.
  • While the pasta is cooking, add the oil to a pan over low heat.
  • When hot, add the garlic and red pepper, stirring constantly.
  • Drain the pasta when it is al dente and add it to the pan.
  • Remove from heat and add the parsley and the juice of half a lemon.
  • Season to taste.
