Recipe for Spaghetti al Pesto with Shrimp

  • 1 package La Moderna® spaghetti, 450 grams
  • 1 1/2 cups basil, for the pesto
  • 1/4 cups parsley, for the pesto
  • 1/2 cups walnuts, for the pesto
  • 3 cloves garlic, for the pesto
  • 1/3 cups Parmesan cheese, grated, for the pesto
  • salt, for the pesto
  • 3/4 cups olive oil, for the pesto
  • butter, for the shrimp
  • 2 cups large shrimp
  • 1 cup cherry tomato, in half, for garnish
  • Parmesan cheese, in slices, for garnish

  • Heat enough water in a pot until it boils, then add the salt and wait for it to boil again. Add the La Moderna® Spaghetti, cook for about 8 minutes, remove from heat, and drain the pasta. Set aside.
  • For the pesto: Add the basil, parsley, walnuts, garlic cloves, parmesan cheese, olive oil, and salt to a processor. Grind in small bursts of 5 seconds until you achieve a well-integrated mixture. Set aside.
  • Heat a pan over medium heat, add the butter and shrimp. Cook until you achieve a golden color, then remove from heat and set aside.
  • Add a bit of pesto to the same pan, wait for it to heat up, and incorporate the cooked spaghetti and the rest of the pesto. Cook for 2 minutes, add the shrimp and cherry tomatoes, and serve immediately.
  • Accompany the spaghetti al pesto with shrimp with slices of parmesan cheese.
