Saffron Spaghetti with Poppy Seeds

  • 400 grams spaghetti
  • 1 leek, finely chopped
  • 1 shallot, finely chopped
  • 100 grams shiitake mushroom
  • 100 grams button mushroom, enoki
  • 4 pepper, of hibiscus 4 pepper, of hibiscus

  • 12 poppy seeds

  • Cook the pasta in boiling water for 12 minutes, with a touch of olive oil and salt.
  • In a pan with oil, sauté the pepper, saffron, and poppy seeds. Add the leek, chopped shallots, shitake mushrooms, and enoki. Let cook and season with salt and pepper.
  • Add the milk to the pan and let it thicken.
  • Add the pasta to the pan and stir. Cover with grated cheese and chopped basil. Grate the manchego cheese and broil in the oven.
