Spaghetti Cake

Spaghetti with meatballs is always delicious; prepare this version of spaghetti cake stuffed with meatballs made of chorizo, bacon, and cheese, cooked in a red wine tomato sauce. A very original way to enjoy this classic.

  • 1/2 kilos ground beef, for meatballs
  • 1 egg, for meatballs
  • 1/4 cups white onion, finely chopped for meatballs
  • 1 tablespoon garlic, finely chopped for meatballs
  • 1 cup Parmesan cheese, for meatballs
  • 1/4 cups parsley, finely chopped for meatballs
  • 1/2 cups bacon, golden and finely chopped
  • 1/2 cups chorizo, golden and finely chopped
  • 1 pinch salt and pepper
  • 1 cup Mozzarella cheese, cut into cubes
  • 3 liters water
  • 500 grams spaghetti
  • 2 tablespoons salt
  • 3 tablespoons olive oil, for the sauce
  • 3 tablespoons butter, for the sauce
  • 1 tablespoon garlic, finely chopped for the sauce
  • 1/2 cups white onion, finely chopped for the sauce
  • 2 cups tomato, canned, poached, finely chopped for the sauce
  • 1 cup tomato purée, for the sauce
  • 1/2 cups red wine, for the sauce
  • 1/4 cups beef broth, for the sauce
  • 1 pinch salt and pepper
  • 1 cup Manchego cheese

  • Preheat the oven to 180° C.
  • For the meatballs, mix all the ingredients in a bowl until combined. Season to taste with salt and pepper, form small meatballs, fill with mozzarella cheese, and set aside.
  • Heat a small pot with water until it reaches boiling point, add salt, cook the pasta according to the package instructions, drain, and set aside.
  • For the sauce, heat a pan with olive oil, sear the meatballs on all sides, and remove from the pan. In the same pan, add the butter, cook the garlic with the onion, add the tomato, and tomato puree, cook for 10 minutes. Add the wine, beef broth, the reserved meatballs, season, and cook until the liquid reduces and the meatballs are fully cooked.
  • In a bundt pan, place a bit of sauce and cheese, add some pasta, meatballs, cheese, and fill with more pasta until the pan is full, bake for 10 minutes, remove from the oven, unmold, and add more cheese to melt with the heat.
  • Cut and enjoy.
