Spaghetti with Asparagus and Ham in Cream Sauce

  • 500 grams asparagus, fresh
  • 3 tablespoons butter
  • 200 grams turkey deli ham, cut into 3 cm strips
  • 3 cups sour cream
  • 3 tablespoons Parmesan cheese, freshly grated
  • black pepper, freshly ground

  • Bring a large pot of 5 liters of water to a boil.
  • Cut the tips of the asparagus. Cut the end to 5 cm from the tip, and divide it in two.
  • Add salt to the water. Add the tips and boil until cooked but crisp and a bright green. Remove them from the water with a slotted spoon and let them cool slightly.
  • Cook the pasta in the same water where you boiled the asparagus, according to the time indicated on the package and drain.
  • Melt the butter in a skillet and add the turkey ham. Fry until the butter starts to brown. Add the cream and bring to a boil again. Add a little freshly ground pepper.
  • Add the asparagus tips to the cream and mix; the cream should already be thick.
  • Pour the pasta into a warm serving dish. Add the sauce and parmesan, stir to coat and taste for salt and pepper before serving.
