Spaghetti with Guajillo Sauce and Shrimp

  • 1 kilo spaghetti, cooked
  • 10 dried guajillo chiles
  • 2 cups tomato purée
  • 1/4 onions
  • 2 cloves garlic, finely chopped
  • 500 grams shrimp
  • 1 goat cheese, with ash
  • 2 cups spinach
  • 150 grams pine nuts
  • 1 bunch asparagus, cut into sticks
  • pinches salt
  • 1 teaspoon pepper

  • Melt the butter in a skillet over low heat. Once the butter is melted, add the shrimp.
  • Stir the shrimp to allow them to cook on both sides.
  • Add the asparagus, stir very well.
  • Add the spinach; once it changes color, incorporate the cooked spaghetti. Let the preparation cook for 5 more minutes.
  • In a blender, add onion, guajillo chili, finely chopped garlic, tomato puree, and a cup of water. Blend perfectly until all ingredients are well combined. Incorporate the sauce into the spaghetti preparation.
  • Cook for 10 minutes, stirring very well. Add salt, pepper, goat cheese, and mix perfectly. After 2 minutes, turn off the heat.
  • Serve and garnish with more goat cheese and pine nuts.
