Spaghetti with Spinach

  • In a pot, bring salted water to a boil. (The water should taste like seawater) Cook the pasta according to the package instructions.
  • In a hot skillet, add a drizzle of olive oil, then add the onion, followed by the spinach and tomato, and let it cook for 5 minutes. Season with salt and pepper and taste.
  • Add the cream. Let it reduce, season, and taste again.
  • Strain the spaghetti and reserve a bit of the cooking water, adding it to the spinach sauce. Add enough water to make a smooth sauce and not too thick. Add the parmesan and mix everything together.
