Spaghetti with Vegetables and Seafood

  • 2 onions
  • 1/2 pimentones, red
  • 1/2 pimentones, yellow
  • 1/2 pimentones, orange
  • 7 cloves garlic
  • 1 carrot , medium grated
  • 3 tomatillos, medium
  • 1 tablespoon oil
  • 800 grams shellfish, assorted (squid, octopus, shrimp, mussels, etc.)
  • 400 grams spaghetti pasta
  • salt
  • pepper

  • Chop the onions, bell peppers, and tomatoes into small cubes.
  • In a large pot, sauté the onions, bell peppers, and garlic in oil over medium heat until the onion becomes translucent.
  • At this point in the sauté, add the tomato and carrot, salt and pepper to taste, and cook for 20 minutes over medium-high heat, stirring frequently.
  • Add the seafood to the vegetables and cook for 10 more minutes over medium heat.
  • Cook the Spaghetti in a separate pot, without cooking it al dente.
  • After 10 minutes of cooking (after adding the seafood), proceed to add the Spaghetti.
  • Cook the preparation until the pasta has the desired final consistency.
  • Serve and Enjoy.
