2 onions
1/2 pimentones, red
1/2 pimentones, yellow
1/2 pimentones, orange
7 cloves garlic
1 carrot , medium grated
3 tomatillos, medium
1 tablespoon oil
800 grams shellfish, assorted (squid, octopus, shrimp, mussels, etc.)
400 grams spaghetti pasta
salt
pepper
Preparation

Chop the onions, bell peppers, and tomatoes into small cubes.
In a large pot, sauté the onions, bell peppers, and garlic in oil over medium heat until the onion becomes translucent.
At this point in the sauté, add the tomato and carrot, salt and pepper to taste, and cook for 20 minutes over medium-high heat, stirring frequently.
Add the seafood to the vegetables and cook for 10 more minutes over medium heat.
Cook the Spaghetti in a separate pot, without cooking it al dente.
After 10 minutes of cooking (after adding the seafood), proceed to add the Spaghetti.
Cook the preparation until the pasta has the desired final consistency.
Serve and Enjoy.
