One of my favorite recipes because it is very easy to make, the Spanish chorizo gives it an exquisite flavor. It always makes me look good, and the best part is that the ingredients are very simple.
For the meat sauce, heat the oil over medium heat in a saucepan. Sauté the onion and garlic until the onion is translucent.
Add the ground meat and cook until browned, then add the tomato puree, wine, oregano, and thyme.
Reduce the heat and let it simmer until the sauce is thick, adding salt and black pepper to taste.
Boil the pasta al dente in salted boiling water, then drain it well once cooked.
Serve the pasta hot, then add the meat sauce. Top with aged cheese or cotija cheese.
