Cook the pasta in plenty of water, a splash of oil, and salt.
Preheat a pan with oil. Cut the pineapple into cubes, coat them in flour and egg, and fry them a little, then remove and set aside. In the same pan, fry the shrimp and mushrooms, let their juices evaporate, add the rosemary, bay leaf, thyme, salt, and pepper, turn off the heat, and cover.
When the pasta is cooked, place it in a dish with the pineapple, shrimp, and mushrooms. Add a little more olive oil and finely chopped parsley, and serve.
