Tagliatelli with Spinach and Goat Cheese

This delicious recipe is very healthy thanks to the cheese and spinach.

  • 500 grams tagliatelli type pasta
  • 500 grams spinach
  • 200 grams goat cheese
  • 1 clove garlic
  • 4 tablespoons olive oil
  • 1 tablespoon peperoncino
  • 4 leaves basil

  • Bring a large pot of water to a boil with 5-6 tablespoons of sea salt. Once the water is boiling, cook the pasta according to the package instructions until al dente.
  • While the pasta is cooking, make the sauce by heating the olive oil in a pan over medium heat and browning the garlic and peperoncino for 2-3 minutes.
  • Add the spinach and cook until it has reduced in size and is very soft. Add the basil and cook for 1 more minute, then remove from heat.
  • When the pasta is ready, remove it from the pot, drain, and pour it into the pan with the spinach, mixing well. Add the goat cheese and mix. The heat from the spinach and pasta will melt the cheese.
  • Serve.
