Preparation
Boil a large pot with 5-6 tablespoons of sea salt. Once the water boils cook the pasta according to the instructions of the package until it is al dente.
While the pasta is cooking, make the sauce starting by heating the olive oil in a pan over medium heat and brown the garlic and the peperoncino for 2-3 minutes.
Add the spinach and cook until they are reduced in size and are very soft. Add the basil and cook for 1 more minutes, remove from heat.
When the pasta is ready, remove from the pot, strain and pour into the pan with the spinach, mix well. Add the goat cheese and mix. The heat of spinach and pasta will melt the cheese.
To serve.
