Tequila Corn Pasta

  • 5 liters water
  • salt
  • 450 grams La Moderna® Tricolor Rotini
  • vegetable oil
  • 1 cup bacon
  • 2 tablespoons garlic
  • 1/4 cups onion
  • 2 cups chicken breast
  • 1 cup pumpkin
  • 1/2 cups corn kernel
  • 1/4 cups Tequila
  • 1 cup tomato sauce
  • 1 cup zucchini blossoms
  • salt
  • pepper
  • queso fresco

  • Add the La Moderna® Tricolor Rotini pasta to a pot of boiling water with a little salt. Cook for 9 to 11 minutes, drain, and set aside.
  • Add a splash of oil to a large skillet over medium heat, sauté the bacon for 3 minutes, then add the garlic, onion, and chicken. Cook for 5 minutes or until the chicken has changed color. Then, incorporate the zucchini, corn kernels, and tequila, and cook for 5 minutes or until the tequila is reduced by half.
  • Pour in the tomato sauce and cook for 5 more minutes. Add the zucchini flowers and La Moderna® Tricolor Rotini, mix, cover, and let rest for 3 minutes.
  • Serve the tequila corn pasta on a large platter and sprinkle with fresh cheese.
