Tuna Primavera Pasta

  • 200 grams fusilli pasta
  • 1/2 cups red onion
  • 1 tablespoon garlic
  • 1 cup pumpkin
  • 1 cup carrot
  • 1 cup bell pepper, of colors
  • 1 tablespoon olive oil
  • 1 1/2 cups canned tuna
  • 2 tablespoons lime juice
  • 1/4 cups Parmesan cheese
  • 3 tablespoons parsley
  • Parmesan cheese, for decoration

  • In a pot, bring water to a boil, add salt, and wait for it to return to a boil, then add the pasta; cook according to package instructions. Drain, cool, and set aside.
  • On a cutting board, use your Victorinox® serrated knife to chop the red onion, garlic, zucchini, carrot, bell peppers, and parsley.
  • In a pan, heat the olive oil and cook the red onion, garlic, tuna, carrot, broccoli, and zucchini for 10 minutes. Add the pasta, lemon juice, parmesan cheese, and parsley.
  • Serve, garnish with parmesan, and enjoy.
