Vegetable Lasagna

Delicious lasagna with fresh vegetables. It's an ideal recipe for vegetarians, very simple yet very nutritious.

  • 8 tomatoes, guaje
  • 2 cups onion
  • 4 cloves garlic
  • 4 tablespoons Parmesan cheese
  • 8 teaspoons dried basil
  • 2 cups water
  • 8 sheets lasagna pasta
  • 1 cup broccoli, cooked
  • 1 cup spinach, cooked
  • 2 1/3 cups button mushrooms, cooked
  • 3/4 cups requesón
  • 2/3 teaspoons Parmesan cheese

  • To prepare the sauce: Dice the tomatoes and onion into cubes to make it easier to blend the mixture.
  • Blend the tomatoes, garlic, onion, parmesan cheese, dried basil, and 2 cups of water.
  • Pour the sauce into a pan and bring it to a boil.
  • You can add whole basil leaves to the sauce while it cooks to enhance its flavor.
  • To prepare the lasagna: In a baking dish, place a layer of lasagna sheets. Add a bit of broccoli, spinach, and mushrooms.
  • Sprinkle a little ricotta. Add a tablespoon of tomato sauce.
  • Repeat steps 5 and 6 until you use all the lasagna sheets.
  • Remember to finish with the vegetable mixture. Bake for 25 minutes at 180° C. When ready, add 1/2 teaspoon of parmesan cheese.
