4 tablespoons egg white, raw
2 cups mustard
2/3 cups canola oil
1/3 cups vinegar
black pepper
2 tablespoons parsley
egg, cooked and chopped

With a scissors cut the tips of the artichoke leaves.
Rub the edges with the lemon so that the cut leaves do not blacken.
Cook 20 minutes in an express pot with salt and vinegar.
Mix in a bowl oil, vinegar, mustard, parsley and add the chopped egg whites.
Place the artichokes on the presentation plates and pour the vinaigrette on top.
Serves in a deep dish and a side dish to discard the leaves.
