4 tablespoons egg white, raw
2 cups mustard
2/3 cups canola oil
1/3 cups vinegar
black pepper
2 tablespoons parsley
egg, boiled and chopped

Using scissors, cut the tips of the artichoke leaves.
Rub the edges with lemon to prevent the cut leaves from browning.
Cook for 20 minutes in a pressure cooker with salt and vinegar.
Mix in a bowl oil, vinegar, mustard, parsley, and add the chopped egg whites.
Place the artichokes on the serving plates and pour the vinaigrette on top.
Serve in a deep plate and a side plate to discard the leaves.
