Artichokes in vinaigrette

This recipe is a delicious artichokes in vinaigrette to enjoy an exquisite dish. Try this way to prepare the artichokes and you will be surprised at not being able to leave it.

  • 1 lime, the juice
  • vinegars

  • artichoke, big without thorns
  • 4 tablespoons egg white, raw
  • 2 cups mustard
  • 2/3 cups canola oil
  • 1/3 cups vinegar
  • black pepper
  • 2 tablespoons parsley
  • egg, cooked and chopped

  • With a scissors cut the tips of the artichoke leaves.
  • Rub the edges with the lemon so that the cut leaves do not blacken.
  • Cook 20 minutes in an express pot with salt and vinegar.
  • Mix in a bowl oil, vinegar, mustard, parsley and add the chopped egg whites.
  • Place the artichokes on the presentation plates and pour the vinaigrette on top.
  • Serves in a deep dish and a side dish to discard the leaves.
