Arugula Salad with Parmesan Cheese

This rich salad is very easy to make. The lemon dressing makes an excellent combination with the Arugula and the Parmesan cheese gives the final touch.

  • 6 cups arugula
  • 150 grams Parmesan cheese, high quality
  • 1/2 cups olive oil
  • 1/2 cups lime
  • pepper, to taste

  • Wash the lettuce and dry thoroughly with paper towels.
  • In a small bowl, mix the lemon juice with salt and pepper until the salt has dissolved. Add the olive oil.
  • Mix the lettuce with the vinaigrette in a large bowl.
  • Place the salad on individual plates and place thin slices of parmesan cheese on top.
