This delicious salad is very easy to make. The lemon dressing pairs excellently with the arugula, and the parmesan cheese adds the finishing touch.

6 cups arugula
150 grams Parmesan cheese, high quality
1/2 cups olive oil
1/2 cups lime
pepper, to taste

Wash the lettuce and dry it very well with paper towels.
In a small deep bowl, mix the lemon juice with salt and pepper until the salt has dissolved. Add the olive oil.
In a large deep bowl, mix the lettuce with the vinaigrette.
Place the salad on individual plates and top it with thin slices of parmesan cheese.
