250 grams dried white bean, small
1 red onion, chopped
4 tablespoons parsley
10 black olives
3 tomatoes, cut into wedges
2 eggs, halved
5 tablespoons extra virgin olive oil
3 tablespoons white vinegar
pepper, to taste

Low
Soak the beans in water overnight to soften them. Boil them with plenty of water and discard the first water.
Boil again for an hour, or until tender, and drain.
While still warm, mix with oil, vinegar, salt, and pepper. Then add chopped parsley and onion, and garnish with tomato, olives, and eggs.
