Bean Salad

A very popular salad in Turkey and Greece. It is rich and nutritious.

  • 250 grams dried white bean, small
  • 1 red onion, chopped
  • 4 tablespoons parsley
  • 10 black olives
  • 3 tomatoes, cut into wedges
  • 2 eggs, halved
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons white vinegar
  • pepper, to taste

  • Soak the beans in water overnight to soften them. Boil them with plenty of water and discard the first water.
  • Boil again for an hour, or until tender, and drain.
  • While still warm, mix with oil, vinegar, salt, and pepper. Then add chopped parsley and onion, and garnish with tomato, olives, and eggs.
