Ingredients

6 portions
  • 250 grams dried beans, girls
  • 1 red onion, chopped
  • 4 tablespoons parsley
  • 10 black olives
  • 3 tomatoes, cut into segments
  • 2 eggs, hard cut in half
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons white vinegar
  • to taste black pepper, to taste

Preparation

Soak the beans in water from a night before so that they soften. They are boiled with plenty of water and the first water is thrown away.
They are boiled again for an hour, or until they are tender and drain.
Still hot mix with oil, vinegar, salt and pepper. Then add the chopped onion and parsley, and garnish with the tomato, olives and eggs.

PRESENTATION

The beans are served cold in a deep bowl and are decorated with the eggs cut in half, the tomato segments and the black olives.

TIPS

You can also use 500gr. of canned beans instead of dried ones. Drain and mix with the vinaigrette.
