Bean Salad with Basil Vinaigrette

Delicious salad that will fill your day with energy, ideal for a diet, high in protein, complement your diet with this easy and rich bean, corn, tomato and pumpkin salad with a tangy basil vinaigrette.

  • 1 1/2 cups beans, cooked and without liquid
  • 2 cups pumpkin, Italian, cut into medium cubes
  • 2 cups cherry tomato, halved
  • 1 cup corn, in grain
  • 2 avocados, cut into small cubes
  • 1/4 cups red onion, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 limes, just the juice
  • 5 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 6 leaves basil
  • salt and pepper

  • In a salad bowl add the black beans, the pumpkin, the cherry tomato, the corn kernels and the diced avocado, the onion, the coriander, the lemon juice, season with salt and pepper.
  • For the vinaigrette, blend the olive oil with the white vinegar, basil, salt and pepper.
  • Add the vinaigrette to the salad 1 minute before serving.
