Delicious salad that will fill your day with energy, ideal for a diet, high in protein complements your diet with this easy and rich salad of beans, corn, tomato and pumpkin with an acidita vinaigrette of basil.

Ingredients

4 portions
  • 1 1/2 cups bean, Cooked and without liquid
  • 2 cups pumpkin, Italian, cut in medium cubes
  • 2 cups cherry tomato, matches in half
  • 1 cup corn, in grain
  • 2 avocados, cut into small cubes
  • 1/4 cups red onion, finely chopped
  • 2 tablespoons fresh coriander, finely chopped
  • 2 lemons, just the juice
  • 5 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 6 leaves basil
  • to taste salt and pepper

Preparation

In a salad bowl add the black beans, the pumpkin, the cherry tomato, the corn grains and the chopped avocado in small squares, the onion the cilantro the juice of the lemons season with salt and pepper.
For the vinaigrette, liquefy the olive oil with the white vinegar, basil, salt and pepper.
Add the vinaigrette to the salad 1 minute before serving.

PRESENTATION

In a salad bowl accompanied by the vinaigrette.

TIPS

It is recommended to serve the vinaigrette just before serving the salad, otherwise the vegetables will be oxidized.
