Beet and Rice Salad

  • 3 beets, peeled and cooked
  • 10 cherry tomatoes, washed
  • 1 bunch parsley, disinfected
  • 1 cup white rice, cooked
  • olive oil
  • salt and pepper

  • Cut the cooked beets into medium cubes and place them in a salad bowl.
  • Add all remaining ingredients except for the rice and mix everything together.
  • Once our salad is well mixed, add the rice at the end and incorporate it with slow movements so it doesn't break.
  • Chill in the refrigerator for 20 to 30 minutes and serve.
