  • 1 pineapple
  • 2 beets
  • 1/2 butterhead lettuce
  • 1/2 cups peanuts
  • 1 clove garlic, small
  • 1/4 onions
  • 1/2 cups orange juice

  • 2 cups olive oil
  • leaves spearmint, for garnish
  • sesame seeds, candied

  • Chop the cucumber and pineapple into small cubes; grate the beet. Set aside.
  • For the dressing, blend the peanuts, onion, garlic, orange juice, with salt and pepper. Add the olive oil in a stream until you achieve a creamy and light texture.
  • On a plate, place the lettuce as a base, add the beet, cucumber, and pineapple, and garnish with mint and candied sesame seeds.
