Blue Cheese Salad with Pear and Walnut

This salad features blue cheese, walnuts, and pears. Everything is in a Dijon dressing with lemon and thyme. It makes a great starter for dinner or lunch.

3 tablespoons lime juice, fresh
1 tablespoon Dijon mustard
1 shallot, finely chopped
1/2 teaspoons fresh thyme
1/2 cups olive oil
lettuce mix, of different types (spinach can also be used)
2 pears, ripe pears, cut into small pieces
1 cup gorgonzola cheese, or any other blue cheese
1 cup walnuts, toasted and chopped
black olives, optional

Prepare the dressing: mix lemon juice with Dijon mustard and add the shallot and thyme.
Gradually add the olive oil until it thickens. Season with salt and pepper.
Toss the lettuce with the prepared dressing and divide among the plates.
Top with pears, walnuts, and blue cheese.
Serve with a little more dressing on top.
