Breaded Chicken Salad with Nuts

  • 1 bag Eva® tuscan salad, 250 g
  • 2 chicken breasts, clean and boneless
  • salt
  • pepper
  • flour, to bread
  • egg, beaten, to bread
  • cooking spray
  • 1 mango, cut into large cubes
  • 1 avocado, cut into large cubes
  • 1/2 cups cherry tomato, of colors, in halves

  • Open the Toscana Eva® salad bag and place the nuts in a bowl. Set aside the other ingredients.
  • Season the chicken with salt and pepper on both sides. Bread the chicken by passing it through flour, eggs and dried fruits that you previously set aside.
  • Cook the chicken in a pan with a little cooking spray, until it is completely cooked. Remove and cut into strips, reserve.
  • Place the remaining content of the Toscana Eva® Salad in a bowl, arrange the chicken strips, the mango, the avocado, the tomatoes and add the white wine vinaigrette. Enjoy
