Breaded Chicken Salad with Nuts

  • 1 bag Eva® tuscan salad, 250 g
  • 2 chicken breasts, clean and boneless

  • egg, batter, for breading
  • cooking spray
  • 1 mango, cut into large cubes
  • 1 avocado, cut into large cubes
  • 1/2 cups cherry tomato, colorful, halved

  • Open the Eva® Tuscan Salad bag and place the nuts in a bowl. Reserve the rest of the contents.
  • Season the chicken with salt and pepper on both sides. Bread it by passing it through flour, egg, and the reserved nuts.
  • Cook the chicken in a skillet with a bit of cooking spray until fully cooked. Remove and cut into strips, set aside.
  • Place the remaining contents of the Eva® Tuscan Salad in a bowl, arrange the chicken strips, mango, avocado, tomatoes, and drizzle with the white wine vinaigrette. Enjoy.
