Broccoli and Avocado Salad

Fresh and crunchy broccoli salad with avocado and walnuts in a lemon dressing, you have to try it!

  • 650 grams broccoli
  • 1 avocado
  • 3 tablespoons lime juice
  • 1/2 cups walnuts, chopped
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoons salt
  • 1/4 cups olive oil
  • 1 tablespoon parsley

  • Cut the broccoli florets from the stems. Boil in salted water for 3 minutes. Remove from the water and cool.
  • Peel the avocado and cut it into cubes, place in a bowl with 2 tablespoons of lemon juice to prevent browning.
  • Add the broccoli and walnuts to the bowl.
  • In a separate bowl, mix the remaining lemon juice, mustard, salt, oil, and parsley. Stir and pour over the vegetables, mixing gently.
