Caesar salad with marinated chicken

This recipe is a delicious Caesar salad with marinated chicken. Enjoy it to start the meal; the traditional Caesar salad never fails to be a classic.

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 2 cloves garlic, chopped
  • 1/4 yellow onions , chopped
  • 1 chipotle chile in adobo sauce, chopped
  • 3 sun-dried tomatoes, chopped
  • 2 tablespoons apricot jam, sugar-free
  • few salt
  • black pepper powder
  • 1 chicken breast, in large cubes
  • romaine lettuces, washed and disinfected
  • Parmesan cheese, freshly grated

  • 3 tablespoons olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard
  • 2 anchovy fillets
  • salt
  • black pepper powder
  • 3 tablespoons Parmesan cheese

  • Mix together in a bowl the oil, vinegar, garlic, onion, chipotle, dehydrated tomatoes, jam, salt, and pepper until well combined.
  • Marinate the chicken cubes in the marinade and cook in a hot skillet until golden brown and fully cooked.
  • Blend all the ingredients for the dressing in a food processor until you obtain a homogeneous mixture.
  • Place the lettuce leaves in a salad bowl, add the chicken on top, and drizzle with dressing to taste.
  • Serve the salad with freshly grated Parmesan cheese and croutons to taste.
