Caesar salad with marinated chicken

This recipe is a delicious cesar salad with marinated chicken. Enjoy it to start the meal, the traditional cesar salad never ceases to be a classic.

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 2 cloves garlic, chopped
  • 1/4 yellow onion, chopped
  • 1 chipotle chile in adobo sauce, chopped
  • 3 sun-dried tomatoes, chopped
  • 2 tablespoons apricot jam, sugarfree
  • few table salt
  • black pepper powder
  • 1 chicken breast, in large cubes
  • romaine lettuces, washed and disinfected
  • Parmesan cheese, freshly grated
  • croutons, croutons, optional
  • 3 tablespoons olive oil
  • 1 clove garlic
  • 1 tablespoon lime juice
  • 1 teaspoon mustard
  • 2 anchovy fillets
  • table salt
  • black pepper powder
  • 3 tablespoons Parmesan cheese

  • Mix in a bowl the oil, vinegar, garlic, onion, chipotle, dehydrated tomatoes, jam, salt and pepper, until integrated.
  • Marinade the chicken cubes in the marinade and cook in a hot pan until they turn golden and are well cooked.
  • Integrates all the ingredients for the dressing into a food processor until a homogenous mixture is obtained.
  • Place the lettuce leaves in a salad bowl, add the chicken on top and add dressing to taste.
  • Serve the salad with freshly grated Paremsan cheese and croutons to taste.
