In a pot, boil water and when it reaches a boil, add salt, wait for it to return to temperature and add La Moderna® Tornillo pasta. Cook for 9 to 11 minutes, drain, let cool, add a tablespoon of olive oil, and set aside.
For the Caesar dressing, mix in a bowl the egg yolk, anchovies, garlic, mustard, and lemon juice, then slowly drizzle in the olive oil, until emulsified and achieving a dressing consistency. Season with salt and pepper.
For the croutons, in a bowl mix the bread cubes with olive oil, salt, pepper, garlic, onion powder, and paprika. Place on a baking tray and bake for 10 minutes at 180°C or until golden brown, stirring occasionally.

In a bowl, mix the tuna with onion, celery, cilantro, lemon juice, salt, and pepper until combined.
In a bowl mix La Moderna® Tornillo pasta, tuna, lettuce, croutons, parmesan cheese, and Caesar dressing.
