Caprese Salad with Basil Vinaigrette

  • 4 red beefsteak tomatoes
  • 2 fresh Mozzarella cheese
  • 6 sprigs basil
  • 3/4 cups olive oil
  • 1/4 cups balsamic vinegar
  • 1/2 cups basil, chopped
  • table salt
  • fine ground pepper
  • 1/2 cups basil, sliced (for decoration)

  • Wash and slice each tomato into 5 slices, each 1/2 centimeter thick.
  • Also slice the cheese into pieces of the same thickness and set aside.
  • For the basil vinaigrette: In a bowl, mix the oil with balsamic vinegar and chopped basil, seasoning with salt and pepper to taste.
  • To finish the salad: season both sides of the tomato and cheese slices with salt and pepper.
  • Stack them to form a tower, alternating cheese and tomato.
  • Pour a little vinaigrette on each layer and top with a few sliced basil leaves on the plate.
  • Chill before serving.
