Carrot and Tangerine Salad with Cocoa

  • 10 grams lettuce
  • 1 carrot, grated 1 carrot, grated
  • 2 mandarin oranges, in wedges
  • 5 grams peanuts, or peanuts
  • 1 tablespoon cocoa
  • 5 grams sunflower seeds
  • 1 tablespoon flaxseed
  • 1 tablespoon sesame seeds, or sesame
  • 1 tablespoon piloncillo, or piloncillo
  • 3 tablespoons olive oil, for the vinaigrette 3 tablespoons olive oil, for the vinaigrette
  • 1 tablespoon balsamic vinegar, for the vinaigrette
  • 1 teaspoon cocoa, for the vinaigrette
  • 3 tablespoons jam, of carrot, for the vinaigrette

  • In a saucepan, mix the peanuts, cocoa, piloncillo, and add a little water until caramelized over low heat.
  • For the vinaigrette, mix all the ingredients in a bowl and set aside.
  • For the salad, add the lettuce, spinach, and carrot in a bowl. Add the flaxseed and sesame, then pour the vinaigrette and top with the cocoa-coated peanuts and tangerines.
