1 teaspoon cocoa, for the vinaigrette
3 tablespoons jam, of carrot, for the vinaigrette

In a saucepan, mix the peanuts, cocoa, piloncillo, and add a little water until caramelized over low heat.
For the vinaigrette, mix all the ingredients in a bowl and set aside.
For the salad, add the lettuce, spinach, and carrot in a bowl. Add the flaxseed and sesame, then pour the vinaigrette and top with the cocoa-coated peanuts and tangerines.
