Chicken Salad in Apples

This delicious chicken salad is made with boiled chicken, bell pepper, onion, and walnut. The creamy dressing includes lemon, mayonnaise, yogurt, and mustard.

  • 6 apples, large red
  • 2 cups chicken, boiled cut into cubes
  • 1/2 cups red bell pepper, chopped
  • 1 1/2 tablespoons red onion
  • 30 milliliters olive oil
  • 1/4 cups lime juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 tablespoon pepper
  • 1/2 tablespoons salt
  • 4 tablespoons plain yogurt
  • 1/4 cups walnuts, chopped

  • Cut off 1 cm from the top of each apple and carefully remove the filling from the apples with a knife, leaving a thick layer to fill with the salad.
  • In a deep bowl, mix the chicken, bell pepper, walnut, and onion.
  • In another deep bowl, mix the olive oil, lemon juice, parsley, mustard, mayonnaise, and yogurt. Season with salt and pepper.
  • Pour the lemon vinaigrette over the chicken and mix well. Fill the apples with the chicken salad and refrigerate or serve immediately.
