6 apples, large red
2 cups chicken, boiled cut into cubes
1/2 cups red bell pepper, chopped
1 1/2 tablespoons red onion
30 milliliters olive oil
1/4 cups lime juice
1 tablespoon fresh parsley, chopped
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
1 tablespoon pepper
1/2 tablespoons salt
4 tablespoons plain yogurt
1/4 cups walnuts, chopped

Cut off 1 cm from the top of each apple and carefully remove the filling from the apples with a knife, leaving a thick layer to fill with the salad.
In a deep bowl, mix the chicken, bell pepper, walnut, and onion.
In another deep bowl, mix the olive oil, lemon juice, parsley, mustard, mayonnaise, and yogurt. Season with salt and pepper.
Pour the lemon vinaigrette over the chicken and mix well. Fill the apples with the chicken salad and refrigerate or serve immediately.
