Ingredients

6 portions
  • 6 apples, big red
  • 2 cups chicken, boiled cut into cubes
  • 1/2 cups red pepper, chopped
  • 1 1/2 tablespoons red onion
  • 30 milliliters olive oil
  • 1/4 cups lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 tablespoon black pepper
  • 1/2 tablespoons salt
  • 4 tablespoons natural yogurt
  • 1/4 cups walnut, chopped

Preparation

Cut 1 cm from the top lid of each apple and with a knife carefully remove the filling from the apples, leaving a thick layer to fill with the salad.
In a deep bowl, mix chicken, bell pepper, walnut and onion.
In another deep bowl, mix olive oil, lemon juice, parsley, mustard, mayonnaise and yogurt. Season with salt and pepper.
Pour the lemon vinaigrette over the chicken and mix well. Stuff the apples with the chicken salad and refrigerate or serve immediately.

PRESENTATION

Just before serving decorate with a little pomegranate or pieces of apple.

TIPS

You can also add chopped celery to the salad. You can also use tomatoes instead of apples. If you use tomatoes, place a leaf of lettuce between the tomato and the salad.
