This rich chicken salad is made with boiled chicken, pepper, onion and walnut. The creamy dressing has lemon, mayonnaise, yogurt and mustard.

Cut 1 cm from the top lid of each apple and with a knife carefully remove the filling from the apples, leaving a thick layer to fill with the salad.
In a deep bowl, mix chicken, bell pepper, walnut and onion.
In another deep bowl, mix olive oil, lemon juice, parsley, mustard, mayonnaise and yogurt. Season with salt and pepper.
Pour the lemon vinaigrette over the chicken and mix well. Stuff the apples with the chicken salad and refrigerate or serve immediately.
