Chicken Salad in Avocado

A different and healthy way to present a simple chicken and vegetable salad.

  • 2 avocados
  • 4 tablespoons mayonnaise
  • 1 chicken breast, cooked and shredded
  • 1 teaspoon lime juice
  • 1/4 cups fresh cilantro
  • 1 potato, cooked, cut into cubes
  • 1 serrano chile, finely chopped
  • salt
  • pepper

  • Blend the mayonnaise, lime juice, and cilantro.
  • Cut the avocados in half and scoop out the flesh to dice it.
  • Mix the avocado cubes, chicken, potato, chili, and the mayonnaise mixture.
  • For presentation, fill the halves with the mixture.
