Chicken Salad with Grapes, Celery, and Walnut

This delicious chicken salad features celery, walnuts, and grapes in a very good mayonnaise dressing. It’s perfect for a light dinner, a school lunch, or even a sandwich.

  • 4 cups chicken, shredded or cubed (previously cooked)
  • 1 cup walnuts, toasted and chopped
  • 1 cup celery, sliced
  • 2 tablespoons shallot, finely chopped
  • 2 cups green grapes, seedless halved
  • 3/4 cups low-fat mayonnaise
  • 3 tablespoons vinegar
  • 2 tablespoons fresh tarragon, chopped
  • 1/2 teaspoons salt
  • 1/2 teaspoons pepper
