Italian Chopped Salad

This Italian chopped salad can be served as a main dish, yielding 1-1/2 cups of the 2-1/2 cups of vegetables recommended for daily consumption.

  • 6 cups romaine lettuce , chopped
  • 1 1/2 cups boneless chicken breast , cooked and chopped
  • 1 cup pasta , small cooked
  • 1 cup cauliflower
  • 2 tomatoes, large and chopped
  • 1 green bell pepper, large, chopped
  • 1/2 cups cheese, mix of five Italian cheeses
  • 1/2 cups Italian dressing
  • 1/4 cups Parmesan cheese, shredded

  • On 4 salad plates, place 1-1/2 cups of lettuce on each.
  • Combine the chicken, pasta, cauliflower, tomatoes, peppers, and crumbled cheese in a large bowl. Add the dressing; toss lightly. Use a spoon to place equal amounts of the mixture over the lettuce.
  • Sprinkle the salad with parmesan cheese.
