This Italian-style chopped salad can be served as a main dish, yielding 1-1 / 2 cups of the 2-1 / 2 cups of vegetables recommended daily.

Ingredients

4 portions
  • 6 cups Romaine lettuce, chopped
  • 1 1/2 cups boneless chicken breast, cooked and chopped
  • 1 cup pasta, cooked small size
  • 1 cup cauliflower
  • 2 tomatoes, big and chopped
  • 1 green bell pepper, big, chopped
  • 1/2 cups cheese, mixture of five Italian cheeses
  • 1/2 cups Italian dressing
  • 1/4 cups parmesan cheese, grated

Preparation

In 4 salad plates and place 1-1 / 2 cup of lettuce in each of them.
Mix the chicken, pasta, cauliflower, tomatoes, peppers and shredded cheese in a large bowl. Add the dressing; Stir slightly. Use a spoon to place equal amounts of mixture on the lettuce.
Sprinkle salad with Parmesan cheese.

PRESENTATION

Decorate with black pitted olives or chopped avocado just before serving.
