Light Buffalo Chicken Salad

Are you a fan of spicy buffalo chicken wings with ranch dressing? If I told you this salad tastes exactly like that but with half the calories, would you believe me?

  • 2 chicken breasts, clean, fat-free, and boneless
  • 1 jar hot sauce, for wings
  • 1 bunch spinach
  • 1 carrot,
  • 8 cherry tomatoes
  • 1 mixed lettuce
  • 2 tablespoons fresh parsley
  • 2 teaspoons garlic
  • 2 teaspoons onion powder
  • 1 teaspoon fresh dill
  • salt, and pepper to taste
  • 1/2 cups Greek yogurt
  • 3 tablespoons low-fat mayonnaise
  • 2 teaspoons light milk

  • For the dressing: Mix natural Greek yogurt with mayonnaise and two tablespoons of light milk in a bowl. Season with dill, chopped parsley, garlic powder, and onion powder, and season with salt and pepper to taste.
  • Rinse the chicken breasts, pat them dry with a paper towel. Marinate them preferably the night before with hot wing sauce, lemon (optional), and a drizzle of olive oil.
  • Grill them in a pan with a little oil, turning them until they are perfectly cooked and lightly golden.
  • Place the lettuce and spinach (previously disinfected) in a salad bowl, add the grated carrot, and the halved cherry tomatoes.
  • Cut the grilled chicken breasts into strips, place them on top of the salad, and drizzle with the homemade ranch dressing.
