Roasted Chicken and Wheat Salad

If you want a rich dish, easy to prepare and do not have many calories to not feel any remorse, this salad is a great option. I hope you like it.

  • 4 cups water
  • 1 cup wheat, in grain, washed and drained
  • 1 leaf bay
  • 2 cups spinach leaf
  • 1 cup green apple, sliced
  • 1/2 cups red bell pepper, chopped
  • 2 tablespoons Dijon mustard
  • 4 chicken breasts, without skin and without bone
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • olive oil
  • 1 cup dressing, of cucumber and yogurt

  • Mix the water, wheat and laurel in a saucepan and cook over medium heat, bring to a boil and cook 2 hours or until the wheat is tender. Drain and throw the bay leaf.
  • Chop a cup of spinach and mix with the apple, the pepper, a little of the dressing and the mustard.
  • Add the wheat and stir well.
  • Heat a frying pan with the olive oil.
  • Sprinkle the chicken breasts and let them cook 5 minutes on each side or until they are ready.
  • Divide the rest of the spinach into four plates and on top add a little of the spinach and apple mixture with the pepper and the dressing and the mustard and place the chicken on top. Serve with the rest of the dressing.
  • Serve immediately.
