Mix the water, wheat, and bay leaf in a pot and cook over medium heat, bringing to a boil and cooking for 2 hours or until the wheat is tender. Drain and discard the bay leaf.
Chop one cup of spinach and mix with the apple, bell pepper, a bit of the dressing, and the mustard.
Add the wheat and stir well.
Heat a pan with olive oil.
Season the chicken breasts with salt and pepper and let them cook for 5 minutes on each side or until they are done.
Divide the remaining spinach among four plates and top with a bit of the spinach and apple mixture with bell pepper, the dressing, and mustard, then place the chicken on top. Serve with the remaining dressing on the side.
Serve immediately.
