Mix the water, wheat and laurel in a saucepan and cook over medium heat, bring to a boil and cook 2 hours or until the wheat is tender. Drain and throw the bay leaf.
Chop a cup of spinach and mix with the apple, the pepper, a little of the dressing and the mustard.
Add the wheat and stir well.
Heat a frying pan with the olive oil.
Sprinkle the chicken breasts and let them cook 5 minutes on each side or until they are ready.
Divide the rest of the spinach into four plates and on top add a little of the spinach and apple mixture with the pepper and the dressing and the mustard and place the chicken on top. Serve with the rest of the dressing.
Serve immediately.
