Roasted Chicken and Wheat Salad

  • 4 cups water
  • 1 cup wheat, whole grain, washed and drained
  • 1 leaf bay
  • 2 cups spinach leaf
  • 1 cup green apple , sliced
  • 1/2 cups red bell pepper, chopped
  • 2 tablespoons Dijon mustard
  • 4 chicken breasts, skinless and boneless
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • olive oil
  • 1 cup dressing, cucumber and yogurt

  • Mix the water, wheat, and bay leaf in a pot and cook over medium heat, bringing to a boil and cooking for 2 hours or until the wheat is tender. Drain and discard the bay leaf.
  • Chop one cup of spinach and mix with the apple, bell pepper, a bit of the dressing, and the mustard.
  • Add the wheat and stir well.
  • Heat a pan with olive oil.
  • Season the chicken breasts with salt and pepper and let them cook for 5 minutes on each side or until they are done.
  • Divide the remaining spinach among four plates and top with a bit of the spinach and apple mixture with bell pepper, the dressing, and mustard, then place the chicken on top. Serve with the remaining dressing on the side.
  • Serve immediately.
