Delicious roasted chicken salad recipe, it can be made with leftover chicken from yesterday's meal, fresh, tasty, and economical. It is very easy to make, in addition to being healthy.

2 cups chicken, roasted and shredded
2 cups Romaine lettuce, chopped
1 carrot, grated
3 tomatoes, diced
1/2 red onions, cut into thin julienne
1/2 cups water
lime juice
salt, to taste
pepper, to taste

In a bowl, place the onion in half a cup of water and the lemon juice.
In a larger bowl, place the rest of the ingredients and mix well.
Strain the onion and add it to the rest of the ingredients.
Add salt and pepper to taste, and it’s ready.
