Salad with pomegranate, chicken, and walnut

We know that salads are not always very appealing dishes, as they often only use lettuce and dressings without much flavor, but this is not the case for this version, as it is accompanied by a delicious homemade vinaigrette and a mix of ingredients that combine perfectly.We added a touch of pomegranate to this recipe, as it is a seasonal ingredient, and sometimes we don't know what to do with it, besides preparing the classic chiles en nogada, so let’s get to work!Did you know?   • 1 chicken breast, boneless and skinless
  • salt

  • olive oil
  • 1/2 cups pomegranate juice
  • 2 tablespoons orange juice
  • 1/4 cups red wine vinegar
  • salt
  • 1/2 cups olive oil
  • 2 cups mixed lettuce
  • 1 cup goat cheese
  • 1 cup pomegranate
  • 1/2 cups walnuts, chopped
  • cilantro leaves, for garnish

  • Season the chicken with salt and pepper and set aside.
  • Heat the olive oil in a pan over medium heat, add the chicken and cook for 5 minutes on both sides. When golden, cover and cook for 5 more minutes. Cut into strips and set aside.
  • In a bowl, mix the pomegranate juice, orange juice, red wine vinegar, and salt. Gradually pour in the olive oil and mix very well. Set aside.
  • Place the lettuce in a bowl, add the goat cheese, chicken strips, pomegranate, walnuts, and cilantro leaves. Serve your salad with the pomegranate dressing!
