Christmas Quinoa Salad

  • 4 cups water
  • 1 tablespoon salt
  • 2 cups quinoa, rinsed
  • 1 broccoli, blanched
  • 1 bunch asparagus, in pieces, blanched
  • 2 cups red grapes
  • 1 cup cranberries
  • 1 cup candied pecans, in pieces
  • 1 cup Oli de Nutrioli® olive oil, for the vinaigrette
  • 2 cloves garlic, finely chopped, for the vinaigrette
  • 1 1/2 cups lime juice, for the vinaigrette
  • 3 tablespoons orange juice, for the vinaigrette
  • 1 teaspoon salt, for the vinaigrette
  • 1/2 teaspoons pepper, for the vinaigrette

  • In a pot over medium heat, boil the water with the salt and add the quinoa. Lower the heat and cook covered for 20 minutes. Cool.
  • In a bowl, mix the quinoa with the broccoli, asparagus, grapes, blueberries, and walnuts.
  • For the vinaigrette, crush the garlic with Nutrioli® Olive Oil. Add the juices, salt, and pepper and emulsify with the oil.
  • Serve the salad with the vinaigrette.
