Cottage Cheese and Radish Salad

A delicious and simple salad, low in fat and rich in vitamin C and potassium!

  • 1 1/2 cups cottage cheese, LYNCOTT®
  • 1/2 cups yogurt, natural unsweetened
  • 1 carrot, coarsely grated
  • 2 chives, chopped
  • 1 teaspoon dill, finely chopped fresh
  • salt, to taste
  • pepper, to taste
  • 1 sprig fresh dill, for decoration
  • leaves lettuce, for decoration
  • 6 radishes, (coarsely grated)

  • Drain the whey from the LYNCOTT® Cottage Cheese.
  • In a baking dish, mix the Cottage Cheese with the yogurt, grated carrot, grated radish, green onion, and dill.
  • Season with salt and pepper to taste. Refrigerate for a minimum of 20 minutes to allow the flavors to meld.
  • On a plate, arrange the lettuce and serve the cottage cheese and radish mixture on top.
