Couscous Salad

Delicious couscous salad. A typical grain from Morocco that can be paired with practically anything. Its neutral flavor makes it perfect as the best side dish or for making exquisite salads. In this case, it will be accompanied by bell pepper, olives, zucchini, and lemon juice; a delight.

  • 1 cup couscous
  • 2 cups water
  • olives
  • 1 zucchini, small
  • lime juice
  • red bell pepper, chopped
  • pepper

  • The couscous is placed in a pot and hot water is added. It is covered and left to fluff.
  • The zucchini and peppers are cut into small pieces.
  • The couscous is stirred with a fork, then zucchini, olives, lemon, salt and pepper, olive oil, and almonds (optional) are added. It can be garnished with parsley.
